We are a group of people who wanted to bring a better and different pizza to Cleveland. What we ended up with is a sauce that shines above the pizza. We couldn’t have imagined the cliché, the secret is in the sauce.
We were very exhausted and tired and making sauce once a gain. We botched the recipe and were too tired to start over. It was well past Midnight. We decided to just put it in the cooler and start over in the morning. The next day the sauce was the best we ever had. We couldn’t stop laughing. Did we even remember what we did? We actually wrote down what we thought happened and tried it again. The recipe didn’t even make sense. The proportions seemed way off from every Italian cookbook. We re-made it anyway and the rest is culinary history. A new sauce created in Cleveland which changes the course for Pizzas in Cleveland and maybe the Country.
To take advantage of the sauce, we merged a true Chicago style Deep Dish with the caramelization of a Detroit style Pizza . It’s not Chicago, It’s not New York, It’s not Detroit. It is Cleveland. Rustic, Hearty, and above all else wonderfully delicious.
We also created a thin crust that takes advantage of our sauce. Spread to the very edge of the cracker thin crust we maximize the flavor throughout the thin crust pizza. Generous amounts of cheese and all the usual toppings. Cut in squares due to the nature of the crust. We can not decide which we feel is better.
